My son always orders these quesadillas when we go to Chili’s for lunch or dinner, so I decided to take a stab at recreating them at home. I didn’t really measure the ingredients exactly — I just “eye-balled” them, however I did use the Pampered Chef grill pan to make these, but you can use your BBQ or a regular skillet.
6 slices of bacon (cooked and crumbled)
Kraft Mexican Shredded Cheese
Wishbone Ranch Dressing
Fajita size Tortillas
Spread the Ranch dressing over the tortilla and add some chicken, cooked crumbled bacon and shredded cheese ( about 1/4 cup). Top with another tortilla and place in grill pan (I placed the grill pan lid on top of the quesadilla, but you can place another heavy pan on top of the tortilla if using a regular skillet). Cook for approximately 5 minutes on each side. Serve with salsa, sour cream, hot sauce, extra ranch dressing or your favorite toppings!
(TIP: Margaritas would pair nicely with this dish for us adults!)
