Fresh Garden Salsa

HAPPY CINCO DE MAYO!

This salsa is a party favorite! It’s a great way to use the fresh tomatoes, cilantro and parsley from your garden this summer.  I serve the salsa in a giant martini glass for an extra special presentation.  Not only do I serve this salsa with tortilla chips, I also top my grilled chicken with it and even serve it with my scramble eggs!

TIP:  I use fresh lime juice and add some of the seeds from the jalapeños for an extra kick!

INGREDIENTS:
Prep/Total Time: 25 min.
Yield: 4 cups

4 medium tomatoes, chopped
1 medium mango, peeled and chopped
1 medium ripe avocado, peeled and cubed
¾ cup fresh or frozen corn (thawed)
½ cup minced fresh cilantro
½ cup canned black beans, rinsed and drained
¼ cup chopped red onion
1 jalapeno pepper; seeded and chopped
3 Tbsp. lime juice
1 Tbsp. olive oil
2 garlic cloves, minced
¼ tsp salt
Tortilla Chip Scoops

In a large bowl combine the first 12 ingredients. Chill until serving. Serve with tortilla chips.
