Rigatoni Alla Vodka

Craving alla vodka sauce?  Skip the take out, and make this delicious sauce at home!  It’s quick and easy, and is rich, creamy and so flavorful.  I add grilled chicken or cooked sausage to it to make it an even heartier meal.


1 cup diced red onion

1 cup diced prosciutto (you can substitute mushrooms if you prefer)

1 oz. vodka

2 oz. imported olive oil

2 medium garlic cloves chopped

4 oz. butter (whole stick)

1 – 1/2 cups heavy cream

1 – 1/2 cups crushed tomatoes

1 cup imported Parmesan cheese (the more the better!)

pinch of white pepper for taste (optional)

1 lb. rigatoni


Heat olive oil in large sauté pan.  Add red onion, garlic and prosciutto.  When garlic turns light brown, remove from burner.

Add vodka (it might flame).  Add tomatoes, heavy cream, butter, Parmesan cheese and pepper.

Heat until everything melts, stirring occasionally.

Add cooked rigatoni and  more cheese.
